Ingredients

  • ½ avocado (peeled, pitted)
  • ¼ cup fat-free, plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon shallots (chopped)
  • 3 tablespoons fresh dill (chopped)
  • 1 tsp avocado oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 avocados (diced)
  • 2 cups dry farro
  • 3 ounces reduced-fat goat cheese (crumbled)
  • 4 cups arugula
  • ⅓ cup green onion or scallions (chopped)
  • ¼ cup dried cranberries
  • ¼ cup chopped walnuts

Directions

  • Prepare farro according to package directions.
  • Prepare salad dressing, combine ingredients into a food processor and process to a smooth consistency. Refrigerate any remaining dressing for future use.
  • In a large bowl, combine cooked farro with arugula, green onion, cranberries, chopped walnuts and apples.
  • Drizzle the Avo Lemon & Fresh Dill Herbed dressing and sprinkle goat cheese on top of the salad.
