Ingredients

  • 1 pouch microwavable brown rice
  • 1 can no salt added black beans, drained and rinsed
  • 1 cup of frozen pepper and onion blend
  • ¼ cup salsa, plus additional for topping
  • 1 medium avocado, sliced
  • 1 medium tomato, diced
  • ½ cup shredded cheddar cheese

Directions

  1. Cook brown rice according to package. Mix 1/2 cup salsa with black beans in a microwave-safe dish.
  2. When rice is done, cover and heat black beans and salsa in the microwave for 90 seconds, or until heated through.
  3. Place pepper and onion mix in a microwave-safe dish. When black beans are done cover and cook them in the microwave for 2 minutes, stirring halfway through cooking.
  4. Split rice, black beans and salsa, and peppers evenly between 3 bowls. Top w/ sliced avocado, diced tomatoes cheese, and additional salsa.
