Ingredients
- 2 cups low-fat vanilla yogurt
- ½ cup canned pumpkin (not pumpkin pie filling!)
- ½ teaspoon pumpkin pie spice
- 2 tablespoons unsalted pumpkin seeds
- 2 tablespoons roasted, unsalted pecans
Directions
- Combine yogurt, pumpkin, and spice in a small bowl. Mix well.
- Divide the mixture evenly among 4 parfait/juice glasses or small bowls.
- Sprinkle each dish with ½ tablespoon of pumpkin seeds and ½ tablespoon of pecans. Enjoy!
Variations & Tips
- Use plain yogurt and add vanilla extract to taste for a lower sugar option.
- This recipe can easily be doubled or tripled, as needed.
