Ingredients

  • 2 cups low-fat vanilla yogurt
  • ½ cup canned pumpkin (not pumpkin pie filling!)
  • ½ teaspoon pumpkin pie spice
  • 2 tablespoons unsalted pumpkin seeds
  • 2 tablespoons roasted, unsalted pecans

Directions

  1. Combine yogurt, pumpkin, and spice in a small bowl. Mix well.
  2. Divide the mixture evenly among 4 parfait/juice glasses or small bowls.
  3. Sprinkle each dish with ½ tablespoon of pumpkin seeds and ½ tablespoon of pecans. Enjoy!

Variations & Tips

  • Use plain yogurt and add vanilla extract to taste for a lower sugar option.
  • This recipe can easily be doubled or tripled, as needed.
