Happy Holidays

The holidays are a time for faith, family, friends and fun. It’s also a perfect time for giving thanks for all that we’ve been able to do this year. Without your support and generosity, we would not have been able to accomplish all that we have.

From bringing care to people experiencing homelessness, to helping new moms and babies, to making college more affordable for nursing students, and bringing compassion and comfort to precious individuals at the end of life, we impact 180,000 lives each year. We are grateful to serve in this way and consistently amazed and inspired by those who support us in our mission. Thank you so very much.

We wish you peace and joy as Christmas Day draws near, and lots of love, laughter and good health throughout the year.

Mount Carmel volunteer honored for Everyday Kindness

Elaine May is a 2025 semifinalist in the Everyday Kindness Heroes program, supported by the Center for HumanKindness at The Columbus Foundation. Columbus Monthly shared Elaine’s story in the December issue. Her work as a pet therapy volunteer at Mount Carmel and elsewhere spans 25 years and has touched countless lives. Congratulations to Elaine, and we are grateful for what she and all of our volunteers do to spread kindness in our community!

Ho Ho Ho…Make your holiday feasting healthier

Aimee Shea, MPH, RDN, CCMS, LD, associate professor of nutrition at the Mount Carmel College of Nursing, has a gift for you…tips and recipes to help you eat healthier during the holiday season!

Here are Aimee’s tips:

  • Fill at least half of your plate with fruit and veggie side dishes.
  • Focus on using herbs and spices to flavor recipes, in place of salt or high fat sauces.
  • Start your meal with a healthy, vegetable-based soup or a green salad - this can fill you up and help minimize overeating.
  • When choosing options at holiday gatherings, focus on your favorites and skip the dishes that are less appealing. Try to enjoy and savor your favorite foods - oftentimes, a small portion can be quite filling if you're eating slowly and really tasting the foods!

If you’re preparing a holiday feast, here are a few of Aimee’s recommendations for recipes to try:

  • Walnut rosemary oven fried chicken - This recipe includes a cooking demo/nutrition education video. The walnut/rosemary flavors are delicious holiday features.
  • Broccoli macaroni and cheese - This recipe also includes a cooking demo/nutrition education video. It’s a great variation on a popular side dish for holiday meals.
  • Pumpkin parfait – It’s a healthier version of a traditional holiday dessert.

Mission in action: Foundation team helps One Dublin Free Shop

The Mount Carmel Foundation team gifted their time and talent this holiday season to One Dublin’s Free Shop, sorting, restocking and organizing. This small nonprofit does great work and relies on 1,200 volunteers to help it each year. We were proud to be among them.
