Beet & Avocado Wraps with Simple Hummus

Ingredients
- ¼ cup lemon juice
- ¼ cup tahini
- 1 tablespoon olive oil
- ½ teaspoon black pepper
- 2 beets, washed, peeled, and julienned
- ¼ cup hummus (see recipe below)
- 4 8-inch whole wheat tortillas
- 8 leaves butter lettuce
- 2 medium avocados, sliced
DIRECTIONS
- Whisk lemon juice, tahini, oil, and pepper together in a medium bowl. Add beets and toss to coat.
- Spread hummus evenly over 1 side of tortilla.
- Place lettuce over hummus. Top with beet mixture and avocado slices.
- Roll up the wrap, burrito-style, and slice in half.
VARIATIONS & TIPS
- Feel free to use any color beets for this recipe. Red beets offer beautiful color, but golden or white beets are delicious alternatives.
- Use whatever greens you have available.
- Add sliced cucumbers or shredded carrots for additional crunch and nutrition!

SIMPLE HUMMUS
Ingredients
- 1 15 oz can chickpeas, drained and rinsed well
- 1 clove garlic
- Juice from ½ lemon
- ¼ cup olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 3+ tablespoons water
DIRECTIONS
- Place chickpeas in a microwave-safe bowl and microwave until hot, about 1-2 minutes on high. This will help create a smoother hummus.
- Add chickpeas, garlic, lemon juice, olive oil, salt and pepper to a food processor and blend until smooth. Add water, 1 tablespoon at a time, as needed to create desired consistency.
- Store in an airtight container in the refrigerator for up to 4 days.
